Gables Caprese salad
creamy burratina, heirloom tomato, basil, toasted pine nuts,
smoked tomato water, garlic croutons

Scallop mousse lasagne
served with a pan-fried scallop, and Arl farm black pudding,
shellfish cream, mangetout and grapefruit

Homemade chicken liver pate
pear and ginger chutney, rocket salad, sourdough toast

Aran islands beetroot cured Atlantic salmon
smoked salmon mousse, sorrel, charred cucumber

Duo of rib and shoulder of Connemara lamb
chateau potatoes, olive tapenade, chargrilled tender stem broccoli, buttered spinach

Pan-fried fillet of sea-bass
saffron baby boiled potatoes, spinach, olives, broad beans, heirloom tomato emulsion

Pork fillet, wrapped in smoked bacon
cabbage parcel of pork shoulder, apple and vanilla purée, shimeji mushroom,
braised fennel and fondant potato

West coast lobster bisque risotto
sea vegetables, pernod flambeed lobster tail

About The Gables 

Our head chef Cian O’Leary is passionate where provenance is concerned and is continually sourcing fresh produce that can be traced back to its local roots and preferably organic, ethical and sustainable. He has put together a specially priced two-course menu of his newly-created dishes for our diners at selected times, and now available for supper club members on Friday and Saturday evenings also

We have been serving Velvet Cloud Sheep’s Yoghurt (from Claremorris, Co. Mayo) for ages and have just listed their lovely Velvet Cloud Rockfield Cheese – a pasteurised semi-hard sheep’s cheese. It’s now served as part of our cheese selection – think a creamier style of Manchego!

As there are no pig farms in Foxrock, our pork products come from Andarl Farm, Co. Mayo – the winner of The Good Pig Award 2017 (awarded by Compassion in World Farming). Ethical free-range farming is the modus operandi here! Our Honey is from Wicklow Bees & Honey, and hand-harvested by Terry! It is served with all our house dressings, on our honey baked ham, in our ‘honey & hazelnut dressing’, with our goat’s cheese salad, on our cheese plates, porridge & fruit salad.

Our Salad Leaves come from Gold River Farm in Aughrim and our potatoes from Ballymakenny Farm in Louth. Our Garlic and Scapes come from Drummond House, also in Louth. Our Lamb comes from the top rated Achill Mountain Lamb. The Gables Pâté is home-made – not any old home, but in our own Kitchen! Likewise our Kimchi and all sauces and dressings.
