Over the years, Greene's has been consistently good, but now the fine food of young Irish chef Bryan McCarthy, is raising the bar for dining in Cork with innovative and elegant plates.

Bryan's food is exceptional, here is a snippet from our recent visit when we had a tasting menu to whet your appetite;

"We started with a frozen parmesan and tomato quenelle, which emerged from a bath of dry ice. The portion was served on a large spoon and the idea was to put it whole into the mouth where it dissolved and the flavours were released. I love parmesan and thought this an Amuse Bouche which lived up to its promise.

Next was local rare breed pork belly, with black pudding, which lead into the prize winning dish of the evening for me; the marinated tuna and dashi custard with pickled seaweed and soya jelly. I love raw tuna, and following on from rich pork belly only enhanced it further.

A passion fruit sorbet with Lychee foam cleansed the palate before a duo of Miso glazed rump cap and a piece of feather blade made for a seriously beefy plate of rich flavours, nicely presented with carrot, onion, leek, kale and black ash.

Star Anise, white chocolate and mandarin confit lead to a second dessert of chocolate praline crème tart and coffee, before we were finally finished off with a fabulous cheeseplate of Irish loveliness."
